De onde veio: o médico americano Robert Pritkin desenvolveu essa dieta e a divulgou em seu livro The Pritkin Principle (O Princípio de Pritkin).

Como é: seres humanos, como muitos animais, comem gordura por causa do instinto natural de estocar reservas. Só que hoje (longe da escassez e da penúria) esse mecanismo de defesa é prejudicial e leva à obesidade. Pritkin diz que engordamos porque comemos alimentos com densidade calórica muito grande e sugere métodos para mudar esse comportamento. Ensina a cozinhar quase sem gordura. Nas refeições, comem-se cereais integrais, um enorme prato de verduras e legumes, carnes brancas magras, proteína vegetal. Pritkin proíbe a carne vermelha e aceita só 10% das calorias diárias de gordura, além de obrigar a comer 40 g de fibras por dia. Estimula a prática diária de atividade física e esportes.

O que promete: ao evitar alimentos saturados de gordura e carboidratos de rápida digestão, a perda de peso costuma ser rápida: cerca de 3 kg por semana.
A favor: o argumento da densidade calórica é correto. A grande quantidade de fibras no cardápio diário é saudável e ajuda o bom funcionamento do intestino. O estímulo aos exercícios também conta pontos valiosos.

Contra: a dieta é difícil de manter porque restringe a um mínimo a gordura, tirando sabor aos alimentos. Discutível também é a proibição total de carne vermelha.
